Vanilla Slices Recipe
They are basically sandwiches of puff pastry with a thick custardy filling and a dusting of sugar or icing (frosting made with confectioner's sugar and water) on top.
- 1 package frozen puff pastry, thawed
- 1 cup of milk
- 1 box of vanilla instant pudding
- 1 cup of whipping cream, beaten until thick
- Confectioners sugar for the top (or icing)
Open out the puff pastry sheets and cut along the lines where it was folded. Then cut the strips so that you get rectangles approximately 2.5 inches by 1.5 inches. Bake the rectangles as directed on the package and then allow them to cool.
When the pastry is cool, cut each one in half across the layers of pastry so that you get a top and bottom to make the sandwiches.
To make the filling beat the vanilla pudding and milk, then mix in the whipped cream until fully combined.
Assemble the vanilla slices by putting some filling on the bottom and then put the top slice on and sprinkle with confectioners sugar or coat with icing.
